			<content:encoded><![CDATA[<p>Do your cookies come out flat or are your muffins bland? Do you want baking delectable treats to be easy and enjoyable? Five basic tips can help.</p>
<p>Follow the recipe. This may seem obvious, but choosing not to use a certain ingredient, or to use less of that ingredient, will often change the chemistry of the whole recipe and affect the outcome of your baked goods. </p>
<p>Use the right tools. Dry and wet ingredients do not measure the same way. Be sure to use the<span id="more-16"></span> correct measuring cups and spoons to help keep the right balance of ingredients called for in the recipe. </p>
<p>Grease your pans with a paper towel. Even when using a spray grease, rub the pan with a paper towel to ensure it is greased thoroughly and evenly.</p>
<p>Be realistic. Whether you are baking for a fundraiser, a party, or a simple family meal, trying to do too much at once can work against you. Making one or two baked treats really well is preferable to making five poorly.</p>
<p>Use quality ingredients. A baked treat is only as good as its ingredients. Using higher quality sugars and real butter will go a long way in making your treats truly delectable.</p>

One of the first steps to baking any cake is having the right tools, and then finding the perfect recipe. Tools can range from cake pans to having top quality ingredients on hand. As for the recipe, well that can depend on what<span id="more-15"></span> type of cake you are looking to bake.</p>
<p>Standard yellow and white cakes are the easiest to start with, and then slowly work your way towards more delicate cakes, like Chiffon or Angel Food. Not that they are overly difficult recipes to master, but they do require you to have more knowledge of baking to achieve success. You could easily buy a white or yellow cake mix but in all honesty the ingredients that go into them are so terribly simple that there is very little need unless you are pressed for time. Besides, we all know that cake baked from scratch always seem to taste better, and they tend to be better for everyone. When making baked goods from scratch don&#8217;t be afraid to play around with your recipe , by changing simple ingredients like the flavorings, you can create new cakes easily.</p>

			<content:encoded><![CDATA[<p>There&#8217;s something about having a cake in the oven that fills a home with anticipation. The sweet, warm smell bids us to taste. Mouths watering, we wonder how the cake will turn out. Will it be as pretty as the picture in the recipe? Will our family and guests be impressed? </p>
<p> Cake baking is fun, exciting, and a great creative outlet. But, what about those of us who don&#8217;t have a lot of time to spend in the kitchen? Well, there are delicious and easy cake recipes that are<span id="more-14"></span> sure to be new and exciting to you and your family. Here&#8217;s one of my all-time favorites. It&#8217;s a basic pound cake recipe with a sophisticated taste.</p>
<p>Lemon &#038; Walnut Pound Cake</p>
<p>Juice of one lemon<br />1/2 tsp grated lemon peel<br />3/4 cup butter<br />3/4 cup sugar<br />1 tsp vanilla<br />3 eggs<br />1 1/4 cups sifted all-purpose flour<br />1/2 tsp baking powder<br />1/4 tsp salt<br />1 1/4 cups chopped walnuts, lightly toasted</p>
<p>Cream butter, lemon peel and sugar with electric mixer for 2 min, medium speed. Add vanilla, then eggs one at a time. Beat well. Sift together dry ingredients; stir in. Fold in walnuts. Butter loaf pan. Bake at 350 for 50 minutes.</p>

We&#8217;ve put together a short list of the things you need to know to make better cakes and we&#8217;re sharing them with you!<br />Keep it Cold &#8211; It&#8217;s much easier to spread frosting and cut a cake down to size when it&#8217;s cold<span id="more-12"></span> so consider putting it in the fridge or even freezing it for a few hours before you get to it. It will decrease the mess and leave you with smoother frosting.<br />Use Mayo &#8211; We know, we know, it sounds gross but if you replace at least half of the oil in your recipe you&#8217;re going to come out with a much smoother, moister cake and people will ask you what your secret is!<br />Use Supports &#8211; If you plan on stacking your cake you should reinforce it with some wooden dowels. If you don&#8217;t have those use some strong plastic straws but be sure to warn everyone when they eat that they&#8217;re in there!</p>

<p>Stick It To &#8216;Em<br />For casual parties, offer treats on sticks. For this recipe, skewer cocktail hot dogs and cocktail onions. Thread one slice of slightly cooked bacon through hot dogs and onions. Brush with a favorite flavored marinade and broil lightly.<span id="more-11"></span> For a sweet treat on a stick, try a recipe of pineapple chunks, banana slices, marshmallows and maraschino cherries. Skewer the fruit and marshmallows. Brush with honey and broil lightly until light brown.</p>
<p>Handy Treats<br />Adults and children all love pudding. Try a tri-color pudding trifle. Ingredients you&#8217;ll need are: a deep bowl, 2 packages of vanilla pudding,  can of lemon pie filling,  can of blueberry pie filling and lady fingers brushed with honey. Layer lady fingers around bottom and sides of the bowl. Add half each of pudding, blueberry pie filling, then lemon pie filling. Repeat until ingredients fill the trifle dish. Garnish with toasted coconut.</p>

<p>Whenever you are baking, make sure to get the oven going 10-15 minutes before you need to put the cake in. This allows the oven to heat to the proper setting and will allow your cake to cook evenly. </p>
<p>For a better<span id="more-10"></span> cake texture, instead of using regular milk make use of buttermilk.I was looking for more information and found it <a href='http://foodiejoanie.wordpress.com/2011/07/06/lime-and-coconut-together/'>here</a>. Should you choose to use this substitute, make sure to include an additional 1/2 teaspoon of baking soda when mixing the dry ingredients.</p>
<p>If you want your cake to be lighter you need to separate the eggs first and when adding eggs to the butter mixture, you should beat the egg whites and then slowly fold them into the batter. </p>
<p>If making a cake that calls for berries or nuts, fluff them in flour beforehand. This will help to keep them suspended in the batter and more evenly spread out.</p>
<p>Before frosting the cake chill the cake in the refrigerator. This will make the cake easier to work with.</p>

<p>2- Heat your oven- make sure your oven is pre-heated to the correct temperature before you try to bake. Do not place your cake in the oven and then<span id="more-9"></span> heat it up from cold.</p>
<p>3- Raising agents- pay careful attention as to whether you need baking soda, baking powder, or air to create that fluffy texture. Using the wrong one or not mixing correctly to add the air may result in flat and failed cakes.</p>
<p>4- Fresh ingredients- stale flour, old milk and clumpy sugar will do nothing for the end product. Select the most fresh, and the best quality ingredients you can get your hands on.</p>
<p>5- Mixing- liquid ingredients often need separate mixing from the dry ones. Don&#8217;t think you can save time by doing it all at once! Careful not to over mix the dry with the wet, or beat too fast.</p>

<p>In order to get the right texture, the exact measurements of ingredients such as flour, butter, baking soda, banking powder, salt, and oil should be used. Where you can go off the beaten path is to substitute other ingredients. For example, regular raisins can be<span id="more-8"></span> swapped out for golden raisins. </p>
<p>Another option is to take a basic sweet treat, and decorate it in a way that makes it stand out. A standard chocolate chip cookie will no longer be just that if you dip half of it in melted chocolate and then into nuts. For cakes, consider an icing that is not the standard pairing. For example, a peanut butter icing on a yellow cake may not be expected, but actually tastes great.</p>
<p>Making exciting treats can easily be done with just a little imagination. There truly is more wiggle room in the baking world than some individuals realize. Try experimenting with your baking, you may just develop the next great dessert recipe!</p>
