There’s something about having a cake in the oven that fills a home with anticipation. The sweet, warm smell bids us to taste. Mouths watering, we wonder how the cake will turn out. Will it be as pretty as the picture in the recipe? Will our family and guests be impressed?
Cake baking is fun, exciting, and a great creative outlet. But, what about those of us who don’t have a lot of time to spend in the kitchen? Well, there are delicious and easy cake recipes that are sure to be new and exciting to you and your family. Here’s one of my all-time favorites. It’s a basic pound cake recipe with a sophisticated taste.
Lemon & Walnut Pound Cake
Juice of one lemon
1/2 tsp grated lemon peel
3/4 cup butter
3/4 cup sugar
1 tsp vanilla
1 1/4 cups sifted all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 1/4 cups chopped walnuts, lightly toasted
Cream butter, lemon peel and sugar with electric mixer for 2 min, medium speed. Add vanilla, then eggs one at a time. Beat well. Sift together dry ingredients; stir in. Fold in walnuts. Butter loaf pan. Bake at 350 for 50 minutes.
